One choice when you book: Monsaraz instead of Evoramonte. That swap lengthens the day by about two hours and has an extra cost.

What to expect
A full private day in the Alentejo. City history in the morning. Cork and a hill town in the afternoon. Your pace inside a clear spine.
We arrive in Évora with time to walk. The historic centre is UNESCO listed: Roman temple, cathedral, Giraldo square, white streets, the weight of a city that was capital of the kingdom in the Middle Ages and still feels like a capital of stone and light. The Chapel of Bones is part of the morning story — walls lined with the bones of thousands, a 17th century meditation on how short life is. Entrance tickets are extra.
Still in Évora we stop for a wine tasting included in the tour price: a chance to sample Alentejo wines properly. This is tasting in town, not a visit to a vineyard or winery estate. Glass, region, grapes, conversation — then lunch at a human hour.
After lunch: a cork processing plant. Portugal leads the world in cork. Alentejo holds much of the montado, the cork oak landscape. Here you see the material leave the forest story and become industry — bark, process, product — not only a souvenir shop fact.
The base day finishes at Evoramonte, the quieter gem: castle hill, white houses, wide Alentejo views, far less famous than Monsaraz and often more peaceful for it.

Évora
Inland capital energy without the coast noise. Romans left the temple. Bishops and kings left the cathedral and walls. Students and locals still use the square. UNESCO status is not marketing fluff here — the centre really is a continuous old city. We walk for understanding, not a sprint between photo stops.
Chapel of Bones (Capela dos Ossos)
Beside the Church of St Francis. Built in the 17th century by Franciscans using bones from crowded city burial grounds — often said to be around five thousand people. Walls and pillars covered so you cannot ignore death while you are still alive. Short visit, strong impression. Tickets are extra and sit outside the base price.
Évora historic centre walk
Roman Temple, cathedral area, Giraldo square, white streets, the grain of a city that was once the court of Portugal. We link the Chapel of Bones to St Francis and the rest of the centre so it feels like one town, not three disconnected monuments.
Alentejo wine tasting (included)
Alentejo is one of Portugal’s great wine regions: heat, plains, cork oak country, bold reds and fresh whites depending on the glass. Tasting is included in the tour price. It is a guided sample of regional wines — not a winery or vineyard visit. Good for flavour and story without adding a full estate stop to the clock.

Cork processing plant
Portugal is the world’s leading cork producer. The Alentejo montado — cork oaks, pasture, open light — is both landscape and economy. A processing visit shows how bark becomes stoppers, materials and design goods. It grounds the pretty “cork forest” idea in work, machines and skill. A very Alentejo chapter most city-only days skip.
Evoramonte (base afternoon)
The hidden gem on this page. Hilltop castle and white village, big views, fewer name-drops than Monsaraz. Strong walls, quiet streets, the Convention of Evoramonte (1834) in the history books for those who like the liberal wars story. Ideal when you want Alentejo beauty without the busiest viewpoint energy.

Replaces Evoramonte. Adds about two hours and an extra cost. Monsaraz is the famous medieval village on the ridge: walls, schist lanes, white houses, views toward the Alqueva lake country. More iconic, more road, later finish. Choose it when that postcard is the one you came for. Évora, wine tasting and cork stay the same.
